“Bachelor Soup” not because I’m a bachelor, or even that I made it when I was a bachelor—I didn’t even start making this until I was married. Rather, Bachelor Soup because my husband doesn’t like soup, so I only make this when he’s away.
This is less a recipe than a rough technique that I generally follow.
Sweat an onion (I usually use a red or sweet yellow one) until it’s soft and cooked down and most of the moisture is driven off.

1 bunch cilantro leaves and steps, roughly chopped 1 cup plain Greek yogurt 4 cloves garlic 2 oz lime juice 2 oz olive oil 1 jalapeno, seeded and minced Salt and pepper to taste Blend everything in a food processor until nice and creamy. Chill.
Works well with cilantro-lime chicken

1 bunch cilantro, roughly chopped
4 cloves garlic
2 oz lime juice
1 oz olive oil
1 tbsp salt
1 tsp chili powder
1 tsp ground cumin
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp pepper
1/2 tsp cayenne or chili powder
2 lbs chicken
Pulse in food processor until well chopped, scraping down sides when necessary. This makes enough marinade for about 2 pounds of chicken.
